Produced by Kweichow Moutai in Guizhou Province, China, Flying Fairy (Feitian) is the flagship expression of China’s most prestigious sauce-aroma (酱香型) baijiu. Crafted using traditional sorghum fermentation and a complex production process that includes multiple rounds of fermentation and distillation over the course of a year, the spirit is then aged to develop its signature depth and complexity.
Aromas of soy sauce, roasted nuts and fermented grain are layered with notes of dried fruit, cocoa and savoury umami, leading to a palate that is powerful, complex and remarkably smooth, revealing flavours of toasted grain, caramel and lingering savoury richness with an exceptionally long finish.
