Dassai, produced by Asahi Shuzo in Yamaguchi Prefecture, is one of Japan’s most internationally recognised sake producers, specialising in premium Junmai Daiginjo made from Yamada Nishiki rice.
The Dassai 39 Junmai Daiginjo is made from Yamada Nishiki polished to 39% of its original size. Aromatic and refined, it shows ripe pear, melon and delicate floral notes with a subtle sweetness. The palate is silky and beautifully balanced, combining generous fruit with fresh acidity and a clean, elegant finish.
